I was diagnosed with Celiac Disease in January of 2010. Going gluten free was more than just a diet change; it was a major life style change for me and those around me.
The question, “Where should we have dinner?” always turned into a multi-smart phone google search for restaurants with gluten free menus. Trips to the grocery store sometimes caused my anxiety level to rise to new heights. For the first six months, I existed mostly on rice noodles, Yoplait, sweet potatoes and just-add-water Thai dishes. My diet lacked creativity and variety.
After meeting with a nutritionist, I felt inspired to get more creative. I enjoy trying to recipes and will share many on this blog. Of course, I love to cook non-gluten free foods from the BF and friends, and will post those as well.
